Two-minute vegan mayo
Thick, neutral mayo from soy milk and oil - no aquafaba, no fuss.

Method

Put the soy milk, mustard and salt in a tall jar and blend with a stick blender.

With the blender running at the bottom of the jar, pour the oil in a thin stream.

Lift the blender slowly as it thickens and emulsifies.

Blend in the lemon juice last. Keeps a week in the fridge.
Note
Soy milk is important here - other plant milks do not emulsify as reliably.
