Homemade cashew milk
Creamy, no-strain plant milk that costs less than the carton stuff and works in tea, coffee, cereal and gravies.

Method

Soak cashews in hot water for 15 minutes (or in room-temp water for 2 hours). Drain.

Add cashews to a blender with 4 cups fresh water, the date, salt and vanilla.

Blend on high for 60-90 seconds until completely smooth.

No straining needed - cashews blend fully. Store in a glass jar in the fridge for up to 4 days. Shake before use.
Note
For chai, skip the date and vanilla. For coffee, add a splash more water so it steams better.
