Rice pudding on coconut and cashew milk, thickened slowly with cardamom.

Method

Simmer the rice in the plant milk on low, stirring often, for 30 minutes until it breaks down.

Add sugar or jaggery and cook 5 more minutes.

Add crushed cardamom and saffron.

Stir in toasted nuts and raisins.

Serve warm or chilled - it thickens considerably as it cools.
