Vegan ghee (coconut oil blend)
Nutty, aromatic and stable at high heat - a solid stand-in for tadka, sweets and greasing tavas.

Method

Heat both oils on very low flame in a small kadai.

Add fenugreek seeds and curry leaves. Let them sizzle gently for 2-3 minutes until aromatic - do not burn.

Stir in turmeric. Take off heat and let cool completely.

Strain through a fine sieve into a glass jar. Store at room temperature; solidifies in cool weather.
