Perfect vegan masala chai
The one thing every new vegan asks about - chai that actually tastes like chai, with oat or soy milk.

Method
- 1
Bring water to a boil with ginger, cardamom and clove. Boil 2 minutes to release aroma.
- 2
Add tea leaves. Boil another 90 seconds till dark amber.
- 3
Add plant milk and sugar. Bring back to a boil once (do not overboil soy - it can split). Simmer 1 minute.
- 4
Strain into cups and serve.
Note
Soy milk with lower boiling temperature - keep flame medium and don't leave the pan. If your plant milk splits, brew tea in water first, then add milk off the heat.
