Sabudana khichdi
Separate, glossy pearls with peanuts and potato - the soak is everything.

Method

Soak the sabudana in just enough water to cover, then drain fully - the pearls should crush between your fingers.

Fry the potato until cooked through, then add cumin, chilli and curry leaves.

Fold in the sabudana and crushed peanuts and cook on low 5 minutes, stirring gently.

It is done when the pearls turn translucent. Do not overcook or it goes sticky.

Finish with lemon and coriander.
