Poha with peanuts & sprouts
The classic Maharashtrian breakfast, upgraded with a handful of sprouts for extra protein.

Method

Rinse poha in a colander under running water till just softened. Drain and set aside. Sprinkle with salt, sugar and turmeric.

Heat oil. Splutter mustard seeds, then add peanuts and fry 1 minute.

Add curry leaves, chilli, onion (and potato if using). Cook till soft.

Add sprouts, cook 2 minutes, then fold in poha gently. Cover and steam 3 minutes on low.

Squeeze lemon, top with coriander.
