Pav bhaji (vegan)
Mumbai street food's most-loved plate - buttery-tasting veg mash with vegan-butter-brushed pav.

Method

Melt 2 tbsp vegan butter in a wide pan. Fry onion 5 min, add ginger-garlic paste, capsicum, then tomato. Cook till mushy.

Add pav bhaji masala, red chilli powder, salt. Cook 2 minutes.

Add the boiled mashed veg and 1/2 cup water. Simmer 10 minutes, mashing with the back of a spoon.

Split pav, brush cut sides with vegan butter and toast on a tava till golden.

Serve bhaji topped with butter, chopped onion, coriander and a squeeze of lemon.
