Instant besan dhokla
Fluffy steamed Gujarati snack with a mustard-and-chilli tadka - naturally vegan, ready in 30 minutes.

Method

Set a steamer with 2 cups water on to boil. Grease a round tin.

Whisk besan, sooji, ginger-chilli, lemon, salt, sugar and water into a smooth thick batter. Rest 5 minutes.

Just before steaming, add eno and 1 tsp water on top - it'll fizz. Mix in ONE direction only, quickly. Pour into the tin.

Steam 15 minutes on medium. Test with a knife.

Heat oil for tadka: mustard, curry leaves, chilli. Off heat, add the sugar water (careful, it splutters). Pour over the dhokla.

Cool 5 minutes, then cut into squares. Top with coriander and coconut.
