Soya chunk curry (soya nutri masala)
Hostel classic, powerhouse of protein - soya chunks in a robust onion-tomato masala.

Method

Boil soya chunks in salted water for 5 minutes. Drain. Squeeze out water thoroughly (rinse with cold water first if too hot to handle).

Heat oil, splutter cumin. Fry onion till golden. Add ginger-garlic paste.

Add tomato puree and spices. Cook till oil separates - 6-8 minutes.

Add soya chunks and 1.5 cups water. Simmer 10 minutes till the chunks soak up the gravy and it thickens.

Finish with coriander. Serve with rice or roti.
Note
Squeezing the chunks well after boiling is the trick - waterlogged soya tastes chalky.
